Pickle Roll Up Dip
I have made this dip 2 different ways depending on who I was sharing it with and both ways it was gobbled up in no time at all. Yum!
Ingredients - Variation 1
- 2 – 8 ounce Packages of Cream Cheese – Use the regular cream cheese otherwise it will NOT taste right. I made that mistake and it was gross.
- 16 ounces Sour Cream – Once again, use the regular sour cream. None of the low-fat/no-fat stuff.
- 16-ounce Diced Ham – You can find this in a package near the Hot Dogs. This is not sandwich meat. If you are feeling ambitious, you can certainly cook your own ham and dice it too.
- 12 ounces Dill Relish – Let me repeat that – DILL Relish and not Sweet Relish.
When I was first trying to come up with this dip, I actually chopped up dill pickles and it was taking so long. My husband asked me why I didn’t just use relish and I was like, duh girl. It makes things so easy.
Instructions
- Let the cream cheese soften. I usually set them in the bowl I am going to use for an hour or 2 before I add the rest of the ingredients.
- Once the cream cheese is softened, add the sour cream and mix until smooth.
- Add the Ham and Relish and mix until everything is incorporated.
- Cover and chill in the refrigerator for about an hour before serving.
- Refrigerate leftovers (if there is any).
Helpful Tips
- You can eat this dip right away if you are crunched for time. Putting it in the refrigerator helps cool the cream cheese back down and also brings all the flavors out.
- Try this dip with crackers, tortilla chips, bread chunks, or vegetables.
- You can make this dip ahead of time and store it in the refrigerator.
- I like to make this dip with my Kitchen Aid stand mixer but you can use a hand mixer if you don’t have one.
Ingredients - Variation 2
- 32-ounce Cottage Cheese – It doesn't matter if you use the small curd or large curd cottage cheese but using the 4% milkfat tastes way better than the 1% milkfat cottage cheese.
- 16-ounce Diced Ham – You can find this in a package near the Hot Dogs. This is not sandwich meat. If you are feeling ambitious, you can certainly cook your own ham and dice it too.
- 12 ounces Dill Relish – Let me repeat that – DILL Relish and not sweet relish.
- ½ - 1 teaspoon Dill Weed – You can play around with this. I usually go with a full teaspoon since we all like the dill flavor around here.
Instructions
- Put the cottage cheese, diced ham, dill relish, and dill weed in a mixing bowl and stir it all up with a spatula.
- Boom baby, pickle roll up dip complete!
- Refrigerate leftovers (if there is any).
