Dark Chocolate Truffles Recipe


Ingredients

  • 1 – 10 oz package of Dark Chocolate, divided

The Ghirardelli Dark Chocolate Flavored Melting Wafers are oh so good!

  • 1 – 8oz package of Cream Cheese, softened

No low fat/no fat stuff! You have to go for the regular cream cheese here.


Instructions

  1. Beat the cream cheese with a mixer until it is creamy.
  2. Melt ½ cup of dark chocolate in the microwave for 30 seconds, then stir until smooth.  If your chocolate is not melted completely, then pop it back in for 15 more seconds, stir, and then repeat.  Do not overheat this!
  3. Stir melted chocolate into the cream cheese.  Do this with your mixer on the low speed setting. Be sure to scrape the sides using a spatula.
  4. After it is all mixed, cover and place in the refrigerator until the cream cheese and chocolate mixture is firm. It will take about 1 hour.
  5. When the hour is up, shape into small truffle balls.  The small cookie scoop is great for making all the truffles a consistent size.
  6. Then roll it in your hands to form the truffle balls.  Place the truffle balls onto a wax paper covered cookie sheet.
  7. After making all the truffle balls, melt the remaining chocolate using the same method as before.
  8. Use a fork to dip your truffles, fully coating each truffle, and return them to the cookie sheet to dry.
  9. Refrigerate for 1 hour, or until the outside chocolate coating is set.


Helpful Tips

  • Decorate your chocolate truffles after you dip them in the melted chocolate with sprinkles (a little bit bigger ones work best), coconut (raw or toasted), finely chopped nuts, or even a chocolate drizzle. 
  • If you need your toppings to stick to the chocolate, decorate as you go; otherwise, your chocolate will set and your toppings won't stay on your truffles.
  • You may also roll the truffles in cocoa powder or powdered sugar.  If you want to do this, wait to roll them until just before you serve them.  Otherwise, both of these will “melt into” your truffles.
  • Dark chocolate is what I prefer, but you can use other chocolates such as white chocolate, semi-sweet chocolate, or even German chocolate.
  • If you want to add a little crunch, mix in a ¼ cup of finely chopped nuts to the cream cheese and chocolate mixture – I like pecans or walnuts.
