Girl, if you don’t have these in your kitchen, don’t sweat it. But these are so good and useful that I highly recommend getting them.
No Bake Chocolate Truffles Recipe
Ingredients
- 1 – 10 oz package of Dark Chocolate, divided
I prefer the Ghirardelli Dark Chocolate Flavored Melting Wafers
- 1 – 8oz package of Cream Cheese. softened
You have to go for the diesel here, no low-fat/no-fat stuff!
Instructions
- Beat the cream cheese with a mixer until it is creamy.
- Melt ½ cup of dark chocolate in the microwave for 30 seconds, then stir. If your chocolate is not melted completely, then pop it back in for 15 more seconds, stir, and then repeat. Do not overheat this!
- Stir melted chocolate into the cream cheese. You can do this with your mixer on low, be sure to scrap the sides, or you can use a spatula.
- Cover and place in the refrigerator until firm, about 1 hour.
- Shape into small truffle balls. I like to use the small cookie scoop here to scoop out the dough and then roll it in my hands to form the truffle balls. Place truffle balls onto a wax paper covered cookie sheet.
- After making all the truffle balls, melt the remaining chocolate using the same method as before.
- Use a fork to dip your truffles, fully coating the truffle, and return them to the cookie sheet.
- Refrigerate for 1 hour, or until the outside chocolate coating is set.
- Store in an air tight container in the refrigerator for up to 2 weeks.
Helpful Tips
- You can decorate your chocolate truffles after you dip them with sprinkles, coconut, finely chopped nuts, or even a chocolate drizzle. If you need your toppings to stick to the chocolate to stay on, decorate as you go otherwise your chocolate will set and your toppings won't stick.
- It is possible to skip dipping the truffles in chocolate and instead roll them in cocoa powder or powdered sugar. If you want to do this, wait to roll them until just before you serve them. Otherwise, both of these will “melt into” your truffles.
- You can use other chocolates such as white chocolate, semi-sweet chocolate, or even German chocolate. I just prefer dark chocolate.
- If you want to add a little crunch, mix in a ¼ cup of finely chopped nuts – I like pecans or walnuts.
