Pumpkin Cinnamon Muffins
Ingredients
- 3 Eggs
- 1 Cup Sugar
- 1 15 ounce Can of Pumpkin
- 1 Cup Butter, room temperature
- 1 Tablespoon Vanilla Extract
- 3 Cups Flour
- 1 Teaspoon Baking Soda
- ½ Teaspoon Baking Powder
- ½ Teaspoon Salt
- ½ Teaspoon Ground Cinnamon
- ½ Teaspoon Ground Nutmeg
- ½ Teaspoon Ground Cloves
Instructions
- Preheat oven to 350°F.
- Grease 2 – 12 count muffin tins.
- Add your eggs and sugar into the mixer and beat until combined.
- Next, add in the pumpkin, butter, and vanilla. Mix again until combined. You may have small butter pieces after you mix it up but trust me, it all tastes so good in the end.
- Then combine the dry ingredients and after giving them a quick stir, add them into the mixer. I like to do half, mix, and then add the other half so the ingredients don’t fly out of the mixer😊.
- Finally, using the cookie scoop, fill each muffin cup just over half full.
- Bake for 12-14 minutes.
Helpful Tips
- Once these muffins are completely cool, store them in an airtight container. These muffins are irresistible and will be gone in no time at all.
- Even though these little babies have butter in them, they are delicious with butter on top.
- If you want to add chopped nuts to these muffins, by all means. 1 cup of chopped pecans or walnuts is enough.
- No muffin tins, no worries. Pumpkin cinnamon muffins can instead be made into pumpkin bread. You will need 1 greased bread loaf pan. Your pan will be full but will not bake over. Trust me, I have made it this way before plenty of times.
