- Kitchen Aid Stand Mixer (a hand mixer and a good mixing bowl work too)

- Small Cookie Scoop
- Cookie Pans
- Cooling Racks
Ingredients
- 1 Cup Butter – Room Temperature
- 1 Cup Powdered Sugar, divided
- 1 tsp Vanilla
- 2 Cups Flour
- 1 Cup Pecans, Finely Chopped
Instructions
- Preheat your oven to 350°F.
- Mix butter, ½ cup powdered sugar, and vanilla until light and fluffy.
- Gradually add flour and pecans until well blended.
- Using the small cookie scoop, scoop out dough and place about 2 inches apart on ungreased baking sheets.
- Bake for about 12 – 14 minutes, or until bottoms are lightly browned.
- Cool for 5 minutes on cookie pans then roll each cookie in remaining powdered sugar until evenly coated.
- Place on cooling racks to finish cooling completely.
Makes about 4 dozen cookies.
Helpful Tips
- You can totally make these Russian wedding cookies without nuts. But you can also make them with finely chopped walnuts.
- If you want to change up the taste a little bit, substitute almond extract or lemon extract for the vanilla.
- Even though you can use the cookie scoop and directly put these cookies onto the pan, I like to put the dough ball in my hand and compact it just slightly. It helps the cookie to stay together better when you bite into it.
- I like using parchment paper on my cookie pans.
