Are you looking to whip up a different kind of Christmas treat this year that is easy too?  I have a simple peanut butter balls recipe that will be fantastic on your Christmas dessert platter.

But don’t think you have to save these just for Christmas. Turns out, they are so tasty as a snack, you can make them for birthday parties, cookouts, graduations, bridal showers, and so much more.

These can easily be your go to dessert.

My mom made these homemade peanut butter balls every Christmas as I was growing up (and still does). She got the recipe from my grandma.  Who doesn’t love an oldie but a goodie recipe?

I have never figured out why but my grandma calls these little babies Sputniks. Since it is such a fun name to say, my kids call them that too.

If you try this simple peanut butter balls recipe, be sure to let me know how they turned out in the comments below.

Simple Peanut Butter Balls Recipe

Ingredients

  • ½ Cup Creamy Peanut Butter
  • ¼ Unsalted Butter, softened
  • 2 Cups Powdered Sugar, divided
  • 1 ½ Cup Rice Krispies Cereal
  • ½ Cup Chopped Walnuts
  • 5 TBLS Milk
  • 1 tsp Vanilla
  • Shredded Coconut

Instructions

  1. Place a piece of wax paper on your cookie sheet.
  2. Cream together peanut butter, butter, and 1 cup of powdered sugar until smooth.  Use the adjustable measuring cup for the peanut butter.
  3. Next, add Rice Krispies and the chopped walnuts and mix.
  4. Using the small cookie scoop, place a scoop of dough in your hands and roll it into a ball.  The cookie scoop is to get the balls all about the same size. Then place the ball on the wax paper.
  5. Continue this step until you have all the dough in a ball form.

Frosting Instructions

  1. Combine 1 cup of powdered sugar, milk, and vanilla in a shallow bowl.
  2. Put about ½ cup of shredded coconut in another shallow bowl.  You may have to add more later.
  3. Roll 1 Peanut Butter Ball at a time in the powdered sugar bowl and coat the whole ball.  Next, roll the ball in the coconut and coat the entire ball.
  4. Place the Peanut Butter Ball back on the wax paper to dry.
  5. When all the Peanut Butter Balls are dry, store them in an airtight container.

Helpful Tips

  • You can toast the coconut in the oven until golden brown for a different look and stronger coconut taste.
  • If you don’t care for coconut, try rolling these balls in festive Christmas sprinkles.
  • Do you love chocolate as much as I do?  Then omit the frosting part of this recipe and dip these balls in melted chocolate.  Dark chocolate is always scrumptious.
  • Instead of adding chopped walnuts, try any chopped nuts, such as pecans, or you may leave them out altogether.
