The great thing about Texas Caviar Dip is that it is pretty healthy so you don’t feel bad at all when you eat a bunch of it (and you probably will because 1 bite is never enough).

Before we dive into how to make this irresistible Texas Caviar Dip, let’s review the kitchen supplies you will need to make it. Spoiler alert – it isn’t many.

Texas Caviar Dip Recipe
Ingredients
- 1 Can (15.5 ounces) Black-eyed Peas, Rinsed and drained
- 1 Red Bell Pepper, Chopped
- 1 Yellow Bell Pepper, Chopped
- 1 Orange Bell Pepper, Chopped
- 1 Medium Onion, Chopped
- 4 Green Onions, Chopped
- ¼ Cup Fresh Parsley, Minced
- 1 Jar (4oz) Diced Pimientos
- 1 Garlic Clove, Minced
- 1 Bottle (8 ounces) Italian Salad Dressing
Instructions
- Chop up your peppers, onions, parsley, and garlic. Then add them to the container.
- Next, drain and rinse the black-eyed peas and add to your container along with the pimientos.
- Pour the Italian salad dressing over the mixture and gently stir to coat everything.
- Cover and refrigerate for about 24 hours.
Helpful Tips
- This dip is best served with tortilla chips.
- You can make this dip and serve it right away if you are crunched for time. It will be more flavorful if you refrigerate it for a day.
- The black-eye peas will have to be rinsed a few times to get them "clean".
- If you want to skip cutting the medium onion, so you don’t cry like I always do, your local grocery store probably carries containers of already chopped onions. This is what I do. It is time-saving and easy.
- This dip can even be made a few days ahead of time but no guarantees that it will make it to your party.
- You can add other ingredients to this dip such as 1 – 15 ounce can of drained corn, freshly chopped avocado (do this right before serving so it doesn’t brown), 1 – 15 ounce can of rinsed and drained pinto beans, chopped tomatoes, and you can do different peppers if you like a bit more zip to your dip.
- Store this dip in the refrigerator in an air-tight container for up to 2 weeks. I have never had it last that long!
